Wines made from Cabernet Sauvignon are full-bodied and powerful, and the best examples are quite age-worthy. The fruit profile is dominated by black-fruit flavors, and it’s known for subtle herbal notes, especially when grown in cooler climates. Interestingly, blends dominate the market, even at the highest levels of quality. Centuries ago, Bordeaux began the tradition of blending Cabernet Sauvignon with small amounts of Merlot and Cabernet Franc (and a few others) to soften tannins and add complexity. Due to its intensity, Cabernet Sauvignon is best paired with rich, red meat dishes that soften its tannins.
